About me

Fourth born in a family of seven children, the sense of celebration and conviviality has pervaded my life since I was a little boy. Growing up in Tuscany, in Florence during winter and Maremma in summer, lunches and family dinners have marked perhaps the most important moments of my childhood. I spent much time around the dining table with my father, mother, two brothers and four sisters ... but then, growing up, also with many great friends ... beautiful girls ... and many other people who have populated the happiest moments of my life.

What I look for in food is perhaps the joy that comes from sharing the pleasures of a such a simple and intimate experience. Good wine also helps ... I sometimes choose the wine based on what I want to eat, some other times I choose what to eat depending on the wine ... it depends on the mood of the moment - the main thing is that I won't eat or drink on my own

Cooking Influences

Florence - in pole position - with its steaks, "tagliate" with Parmesan cheese (my favorite cheese!), artichokes, eggplant (and on and on ... without forgetting the famous "trippa alla fiorentina"!)

Next, the Maremma region, with its "acqua cotta") spaghetti with clams (strictly without tomato sauce) the "gnudi" butter and wild boar stews.

More generally, the Italian cuisine in all its typical and original forms.

Friends
